If you are not firing the weapon anymore...why is it necessary to keep looking down the sights?

Couple thoughts on this........
First -maybe to keep target in immediate view and not lose target view or range.
Second-primary weapon is still up to use as a defense tool to strike
third-maybe faster to move your arm to that position than attempting to remove from position- then go to secondary weapon and if not needed retry clearing again.

That is all done in one very swift motion.
In the film, he breaks it in half to explain it and that is what makes it look weird.

The long gun is unslung. If it were slung or 'lanyarded," he could just "drop" the weapon and pull the pistol.

His is unslung. It's classic really. He tosses the weapon over his back, the sling hooks the torso,  into a "Cross-Back Aussie", and while doing so draws his pistol.

You can't have a backpack though!!!!!!!!!!!
And this is not a modern, lanyard carry move!!!!!!!!

(I show this in Training Misssion One - Gun 1 , the book and DVD, I learned it in the Army and we grabbed the pistol grip of the M-16 and tossed it over our shoulder)

Yeah, looking down the sight here is less a matter of keeping the eye on the enemy, although that is important, and more a matter of making sure the rifle stays in the proper position so that the sling technique works.
