Not sure if this qualifies but---

One drill that I like to work is to have a training partner start  peppering you with blows. Your goal is to cover up, access the knife and bring it into play.

The level of aggressivity depends on skill level and protective gear available.

The basic drill can grow into a fullbown scneraio with verbal interaction, attempts at deescalation, multiple attackers and so on as confidance increases.

i have a few variations...

one is that i have students sit back to back with the knife in between the shoulder blades with both students applying pressure..then i say go and they do whatever to get the knife. you can change this by interlocking arms to make it harder.

another thing is that i whisper two different numbers to each student at the beginning of class. One number is their individual number and the other is the group when i call out 3 then one student pulls a knife at that moment on their classmate and try to cut them. the students are suprised because its a random they always have to be prepared..sometimes i call a fake number to keep everyone on edge..then i call the group number  6 for example and everyone pulls and tries to cut thier partners.

If you call the number of a student who already has an armbar on another student or something where one already has an advantage over the other student..then ask the disadvanted student what they thought...i heard " that isnt fair"  then i you are here training to fight  he understood my point and moved quicker next time..
